Brooke-I just spent 1 1/2 hours looking through your beautiful website and reading all about Karen Hurd. Vanessa told me to try the bean thing and I half-heartedly gave it a shot last week but this puts new determination into me. What's funny is that i already eat tons of beans, I just stopped eating them so much when I started feeling sick. Right now I've got homemade baked beans, chili beans, and refried pinto beans all sitting in my fridge. I probably also have a few cans of garbanzo beans somewhere........I'm off to give this my best effort.

I have been eating pastured meat for years, so I know what I'm getting into in terms of cook time and texture.  I've just always had the fortune of having access to a farmer who sells whatever cuts you want.
